Last Friday I was out of town rocking at the Vans Warped Tour, so I wasn’t able to blog about that week’s CSA delivery. The boyfriend picked it up and said that it was pretty good, but I don’t have a picture to share.
This was a really great CSA week. Good sized portions and some new veggies. Still lots of lettuces, which has been fun, but I’m looking forward to getting more “different” veggies to try out.

Here are some meal plans for this week with these ingredients:
Pizza Cups– I made these on Friday for the weekly remake. Rather than using regular garlic I used garlic scapes, they were much more mild than regular garlic.
Zucchini and Potato Marsala- I’m going Vegan again on Monday and want to use some of the Trader Joes Marsala Simmer Sauce I have in my fridge. Just going to saute the zucchini with a potato and onion, and then let it all simmer in the sauce for a few hours.
Summer Radish Salad– The last time I wanted to make this the radishes dried out before I could make it. Hoping to make this tomorrow.
Either Pickled or Roasted Beets– I don’t think that I have actually every eaten beets. I’m super excited to try these!
Vegan Bean Chili- The boyfriend is looking for a good crock pot recipe to use all the beans we have. Anyone have one worth sharing?
