CSA Weekly Meal Plan v.5

Woohoo! New veggies. I’m super excited about getting more squash type veggies and green beans. It’s time for some Thai food dishes!

This week our share included:

Lettuces

Curly Parsley

Cilantro

Green Onions

Garlic Scapes

Zucchini

Squash

Beets

Radishes

Green Beans

Here are some meal plans for this week with these ingredients:

Roasted Beets- I cooked up some pickled beets last week, and they’re still pickling now, so I STILL haven’t gotten to taste beets yet! I’m going to roast these up this week and dig in!

Prik King– This was my favorite dish at one of the Thai places we went to weekly in LA, and I haven’t had it since moving to Denver. I’m so excited to eat this!

Summer Radish Salad No really, this week is the week!

Squash and Zucchini Curry- Yum, yum, yum.
