CSA Weekly Meal Plan v.8

The CSA has really taken off! We had almost too many veggies to fit in one bag this week. And the different kinds of veggies keep taking off every week, too. Just keeps getting better.

This week our share included:





Crown Sweet Peppers


Green Onions


Italian Parsley






Romaine Lettuce

Butter Lettuce

Here are some meal plans for this week with these ingredients:

More Pickled Beets- Brandon loved the beets that I made last time, so it’s time to make a ton more.

Beets and Radish Chips- Hoping to use up all the beets and radishes this week.

Salad- Salad, salad, salad, salad.

Eggplant, squash and zucchini curry- Yum.

Zucchini Bread– I went to a BBQ this weekend and my friend gave me a MASSIVE zucchini, which I am going to use along with this one to make bread. Never had this before!

Zucchini “Date Night” Pasta- This is what I made for the first dinner I made when I got in to cooking (but with regular pasta).

    • I like the actually use the zucchini for the pasta. I slice it up linguini style, and then add it to boiling salted water for about 3 minutes. You’ll want to run ice water over it after cooking, so that it doesn’t get too mushy.
