homemade ground beef tacos
Tacos are still my favorite dinner. For Christmas Eve, Kristina and I enjoyed ground beef tacos. I spread some refried black beans inside the shell, then added ground beef that I had cooked with taco seasoning and diced green chiles, and topped it with romaine lettuce, diced tomatoes, salsa, and tofutti sour cream. Tacos also win the “Easiest Meal Ever” award in my book.
